02Consultancy

A menuthat sells —and adds up.

Menu engineering for bars and restaurants. I cost your drinks menu, find out what makes your margin and what drains it, and deliver a menu and a bar system your team can still run flawlessly at half past ten at night.

02Entry auditOne-off · the starting point

I cost your entire drinks menu: what every drink costs, what it earns and where margin leaks away. You get a reworked menu and taste the alternatives on the spot.

+Extended audit for a large menu or several bars. Extra venues can join within the same assignment.

Ideal when you want to know which drinks pay and which cost you money.

What you get

  • Full costing of your drinks menu, up to 40 items (coffee, beer and wine included)
  • Four analyses of your menu
  • A reworked menu
  • Presentation at your venue
  • Tasting of three replacement candidates
  • A sample of the bar system
03Bar systemOne-off · I apply and explain it myself

A system that lets your team make every cocktail fast and identically, even on a busy Saturday. Everything numbered, everything written down.

+Bar system Plus: on top of that, the glass-measuring protocol and a pre-batch bundle in three specs (light, standard, generous).

Ideal when every bartender pours differently, or your team changes often.

What you get

  • Numbered bottles, glasses and garnishes
  • Sticker sets
  • Laminated specs per drink
  • Blank pre-batch labels
  • I apply everything myself and walk your team through it
04Peak menuOne-off · in your own house style

At your busiest moments you want serves that are quick and sell well. The peak menu puts those peak heroes on top: the same drinks, in a smarter order.

Ideal when queues build up at the bar on Friday and Saturday nights.

What you get

  • Selection of your peak heroes
  • Reordered menu in your existing house style
  • Delivered on site
  • Reworked with every menu rotation
05Quarterly checkPer quarter · always discussed on site

A menu is never finished. Every month I follow up your figures, and every quarter we sit down at your place and take at least one concrete decision.

+Quarterly check Plus (recommended): on top of that, a menu rotation with tasting every quarter, where your team tastes 5 to 6 candidates and helps choose. Plus new recipes, price review, peak menu, reprints and management of your digital menu. Cheaper than the same modules bought separately.

Ideal when you want your menu to keep paying after the audit.

What you get

  • Monthly follow-up of your figures
  • Quarterly report with at least one decision
  • Review at your venue
